Guji is one of the zones of the Oromia Region of Ethiopia and was named after a tribe of the Oromo people. Natural coffee processing starts when the cherry is sorted by hand to separate the less dense cherries. Then the good cherry is taken to dry under the sunlight and this might take up to 21 days depending on conditions.
When the coffee is dried with cherry, it is milled to remove the husks and stored in the warehouse until transported to the final processing warehouse.
